Originally born in Cape Town, with family member Louis Babrow having played with the Springboks, Sarah Levy grew up in San Diego and started playing rugby at Northeastern University, before graduating in 2018 with a Bachelors of Science in Health Science. Simultaneously working on two major goals post college, Levy continues to play rugby at the highest level and has recently earned a doctorate in Physical Therapy through the University of Saint Augustines in San Marcos.

Playing on each coast with the San Diego Surfers and New York Rugby Club of the Women's Premier League, Levy was selected by the USA Women's Eagles in 2018 to train during the Rugby Weekend in Chicago, earning her first cap against against England shortly after.

Switching to the sevens pitch, Levy's speed and agility transferred well as she was invited to USA Sevens Residency in 2022, debuting on the Sevens Series during the Malaga tournament from Spain.
